On the farm this past month we've been spending many, many hours sorting though thousands and thousands of little round macadamia nuts with their tough outer shells. After harvesting and removing the outside husk of the macadamias, we sort through the nuts in their shells up to 3 times before we consider them ready for cracking and then there's the next step of, yes, MORE sorting of the creamy kernels to remove any with insect damage, signs of germination, or blemishes.
